During my first Christmas Baking Day this year I made a fair amount of this kind of biscuits.
I found them in one of our recipe books, where they were called "Brown Cakes".
Their brown colour comes from the sugar beet molasses the dough contains. They are flavoured with grated lemon peel, grounded cinnamon, cloves and cardamom.
A very tasty and very decorative kind of Christmas pastry.
This year I tried my hand at decorating the cookies with piped icing. I am very pleased with the results, as it was the first time I did something like that.
The icing was made from egg white and icing sugar.
The cookies have holes, so that they can be used as Christmas tree ornaments.
